Green Mint Pesto Salmon Recipe

I like to make this salmon reciep with Copper River Red salmon from Alaska when available (June only) but any wild sockeye or chinook will work well too.



  • 4 Loin fillets of wild red salmon (about 1 inch thick)
  • 1⁄2 cup soy sauce
  • 1⁄4 cup canola Oil

Green Pea & Mint Pesto

  • 1⁄2 Medium Vidalia onion chopped
  • 2 Cloves garlic
  • 4 cups of frozen young peas (thawed)
  • 1⁄2 Tsp. fresh ground black pepper
  • 1⁄2 Tsp. sea salt
  • 1⁄4 cup fresh mint leaves
  • 1 Tbsp. rice wine vinegar
  • 1Tbsp. Extra Virgin Olive Oil


Green Pea & Mint Pesto

  1. In a food processor finely chop the first 2 ingredients, add the peas and puree to a course consistency.
  2. Add the remainder of the ingredients and puree until soft but still has texture. Can be refrigerated for 24 hours.
  3. Leave at room temp for 15 minutes prior to serving.


  1. Brush soy sauce over Salmon filets and let stand for 30 minutes.
  2. Brush with canola oil and grill or pan fry skin side down until skin is just crisp, turn once until just done, the salmon should be red and rare inside and never pink or dry.
  3. When done serve topped with the pesto. The hint of rice wine vinegar in the pesto pairs well with the hint of soy sauce in the salmon crust.
  4. We like to serve this with oven roasted potatoes as a base and a garnish of green onions.
