    We have a street taco joint around the corner from the house. I brought them some BFT after my last trip in October(a gift for the staff to enjoy). Ricardo called me last week to stop by. He sourced some YFT from Mexico and invited me to try a pre-release for the weekend’s fish taco offering.

    Cubed YFT (for the sear) with a teriyaki reduction. House pickled red onion, avocado, toasted sesame seed, on a bed of Asian slaw, sitting atop a house made corn tortilla.

    The ‘over the top’ addition is he puréed pickled ginger, sesame oil, and lime, then created pearls to look like roe. I’ve had fish tacos from Mazatlan to Anchorage. This was amongst the best.

    That being said, any fish taco is better than no fish taco....

    1 cup flour 1 cup beer has been my go to for awhile now. Easy. No water beer allowed.

    For baja sauce...dunno if it's authentic but I don't care, it's good:

    - 1 cup mayo
    - 2-3 chipotle chilies in adobo and 1-2 teaspoons of the sauce (depending on how spicy you like)
    - 3-4 garlic cloves
    - 1 whole lime squeezed

    throw it all in a blender and go to town.

    I can’t say I have ever seen so much rage directed at another mans taco.

    I can’t really be mad at this. Too funny/random. Who doesn’t like a good alcohol-induced rant?

    Besides, if you put sauerkraut and cheese on a fish taco... you kinda have it coming.

    Title is Taco Whore not Taco King. I like contributing to BD and if anyone has something better, share, that's what it's all about. I'll try a fried fish taco from just about anywhere as long a it's fresh. I personally never freeze any of my catch, mainly cause I fish enough that I don't need to. Good stuff (tuna YT) is eaten fresh or goes into canning or smoking then sharing with people who appreciate what it is and count on it.

    I know there are guys out there that preserve/prepare the catch pristinely and are gourmet chefs. I've learned some good stuff from this forum.

    Hismosa has had legit posts and contributions in the past, not sure how I hit a nerve with this thread. Anyways BD polices itself, learned it the hard way. Please relent on the guy, cause I didn't take the comment personally.

    Been retired for a few years, so, yes I'm young with a lot of time and enjoy trying out new gear so I buy things and if I like it I keep it and I don't I sell it. It's fun for me and I learn a lot along the way.

    never ever criticize someone's cooking ideas. listen, learn and maybe try.

    For example, ever smell fish sauce? Smells like old trash. But tjhe shit is great in certain situations.

    Once I friend wanted to grill bacon!! What? I only know how to fry it ... now I grill and smoke bacon.

    Anyone that dumps shit on another man's fish taco is not about Mexico. There are so many different ways to present fish tacos beyond SoCal.

    I'm worth considerably more and I'll admit to periodically buying and selling stuff on BD. Not often, but I do. I think I'd be more of a seller now, just to get rid of shit I don't use.
