    I've only ever heard of escolar being caught in water over 1,000 feet deep. Did you try deep dropping for them? Very few people do it in California because you can't keep most ground fish from that depth due to our depth restrictions, but escolar, sharks, and swords aren't ground fish so you can keep them.

    Escolar meat has been described to me as being a more ... explosive ... version of sablefish, which is my favorite fish to eat, and also caught from around 1,000 feet deep. But sablefish are ground fish so it's illegal to fish for them at that depth; I hope one day we can actually target those in California again.

    We were not targeting Escolar, Just a happy mistake... but it was deep.
    My motorhome holding tank isn’t big enough for us to try any of this fish.

    One of my favourite sushi, but you definitely need to portion yourself. There are not many places which serve this in OC anymore. Congratulations on the catch of a very rate fish on the west coast.

    I always enjoy it when I can find it at sushi restaraunts, which is rare. You'll never find it at Japanese owned restaurants, generally only Korean. Japanese restaurants will get offended if you ask for it.

    The first time I had it I thought they were calling it Wahoo.... (Its also called Walu Walu). Never had a problem eating it, but again only small portions.

    Listened to a video where the guy said if you eat too much, it will cause one to use the restroom facilities in very short order. Priceless!

    If it were me, I'd take some and make a Poke or spicy tuna spread, put em on some chips on a platter, then donate the samples to the patrons waiting in line to get into your nearest pretentious hipster bar or club.

    Escolar taste absolutely f'ing incredible, just limit yourself to less than 6oz and you should be fine.... should be... wear sweatpants and don't sit on the nice sofa! haha
