Looks good! I've also steamed sheepshead with black bean garlic paste, ginger, green onions, chili, and shao hsing rice wine.

Easiest way I know to steam big fish is using a two roasting pans. Wadded up some foils to make a stand for the second roasting pan. Fill the first roasting pan with whatever fluid you want and put your prepared fish in the second pan. Place the second pan on top of the first pan and foiled both together carefully. Use can use an oven or your gas bbq to steam the fish. I preferred to use the bbq to avoid the fish cooking in the house. About 20-30 minutes later the fish should be done. You can check the doneness. You can either drain out the fluid in the fish tray and reserve for stock then add in whatever sauce you want and serve directly in the roasting pan or you can take the fish out into a big platter.
