I got it covered pickleboy.

Take the fish and rub it lightly with a thin coat of a good olive oil and sprinkle it with a little paprika.

Place it over medium hot mesquite charcoal and cook, turning only once. About 5 -7 minutes on the first side depending on the heat and 3-5 on the otheer side, again depending on the heat.

Take it off put it on a plate (not paper or foam) and cover with foil. Let sit about ten minutes to kind of steam and insure doneness.

Some romano potatoes, cole slaw and ice tea and you're eaten like you're at the Fish Market, but better.:D

Go to Offshore Adventures.tv, look at previous shows and you can find several wahoo recipes that sound great. Episode 8, Episode 10, will get you started, if you need some help let me know, I'll try to help you further.

Damnit! Inadvertantly "outed"! You've single-handedly uncivered one of the deepest well thought out undercover operations in fishing history.............Hahahahahhahahahaahahhaaa what a fuckin' mook. Did that even sound believable? Don't make me invite Scooter over here.

I don't joke about cooking though. It's a love of mine. I think fish is damn near perfect the way it is. Don't fuck up what nature has perfected millions of years ago. I prefer a very simplistic approach to preparing the fish I really like. I do halibut, swordies, ono, mahi, WSB all the same way. Lings, bass, sculpin and other assorted bottom critters do get a nice coatin of beer batter before they find their way into a fish taco.:D

Spying for them....oh I pissed myself!:appl:

Wahoo has such delicate flavor, why hide it with anything?

My favorite is just a splash of soy sauce......grilled on a med. hot grill for about 4 min. per side. Pull it off, cover with foil for a few minutes.....to let it kind of "firm up"....and serve it with whatever you like.....I like garlic mashed potatoes, and 3 bean salad.
Add one fresh Margarita and your in heaven.:D

Thank you very much for sharing your special Wahoo recipes with me. This message board is great! Tonight I ended up cooking Wahoo with Japanese seasoning (Sukiyaki flavor). It was delicious. I will try your recipes next time. I have to ask Micah to go fishing to catch Wahoo!!! Again thank you very much.

Try Bersteins Cheesy Italian + crushed garlic + Black Pepper.

Just throw it all in a ziploc overnight and grill.

Tastes great and is easy to make.

Stuck.. Off subject but for mako try marinading in lemon/lime for 1/2 hr then rubbing in cajun spice. Put it on the bbq... eat. Delicious! I do the same with shrimp. Ask the rod wrapping crew...

Those all sound awesome! I am going to try each and every one of them. Here's my contribution:

I never measure this, so these will be approximations.

2 eggs, beaten, with 1/8 cup milk and 1/4 cup honey

Coat fillets in egg/milk/honey mixture

Bread coated fillets in mixture half and half of plain bread crumbs and crushed Macadamia nuts.

Pan fry in margarine.

This is great on wahoo, and mahi!
