The missus wants to go somewhere warm and tropical in February and I need to pick some destination to choose from.

So, if you could fish anywhere in February-March time frame, where would you go?

Tossing a fly for bones, permit & maybe a tarpon????? Or they do a couple of snorkel trips a day. Or a couple of scuba trips a day if you do that.
Family style dinners so you are mixed in with some of the other guests at meal times which is kind of fun. Coffee is delivered to your door every morning.

Check Puerto Vallarta for cow tuna... The Apollo out of Seaforth is down there about that time.

PV for cow tuna, dorado mayhem, and abundant roosterfish.

Isla Mujeres for one of the world's craziest sailfish fisheries. Big American sportfishers, 100lb lunatic sailfish, and stand-up gear in the 30w range. It's a wild ride trying to do the tuna dance at sailfish speed with 5 rods all hooked up and sails jumping 10' out of the water.

Definitely Puerto Vallarta. There is a town about 45 minutes north called Sayulita, cool little town. Its a short drive to Punta Mita where you can get boats to run offshore for big tuna and marlin. From Sayulita you can get pangas that launch off the beach and get dorado, roosters and all sorts of fish. Easy to travel there and lots of different accommodations from hotel to rent homes.
