I don't think I have ever seen anyone use so many knives to fillet a tuna. But I see his point. Restaurants use every bit of the fish. I kinda like this method better:

Both method are fine but as you can see the knifes are the only thing different in it. The collar meat which is call kama-toro is super good and the fattest part of the tune which a lot consider.

Here is something for most of us to learn on how to break down a tuna instead of using a processor. You never imagine how much of the meat we waste or throw away.
