Caught my first cow…80# braid to 100’ of 80# mono using a 5-turn RP knot. Also had a 200# bite leader. On a knife jig. Landed in 53 minutes.

Not knowing how “very rookie” you are.

I would suggest having the landing tackle store or the crew help you with your knots. If you are not 100% sure of your knot get some help.

Not worth losing a big bft over.

that is true, but I can always practice over and over at home, I have a few scales I can use to test the knot

Best to be prepared to tie your own knots.
If there is a bite going on the crew is going to be busy.

Nah
If I am at home and attaching 80lb fluoro or heavier to braid, I'll use a PR knot (using a bobbin; not to be mixed up with an RP knot).

However, on the boat, the safest and strongest connection for a long fluoro leader has been to tie a bimini twist loop in the braid and then use the loop/double strand to tie an alberto/rp to the heavy fluoro leader. The two strands of smaller diameter braid going into the heavier fluoro gives a much more solid connection in my opinion.

I also use this method if I choose to crimp up a shorter (~5ft) fluoro leader with a swivel to attach to the braid. In that situation the bimini loop is then tied on as a double san diego jam knot, but again, with two strands entering the knot and significantly greater strength.

i have done the braid to leader connection with the alberto knot with no fail, but the heaviest I done is 40lb, nothing over that so my concern is if that knot is good for 100lb braid to 80-100 top shots

Makes a big bump. RP knot good for lighter lines 40 ln and less. 50 lb and up I’m inserting into hollow and either crimping or using nail knots.
