To elaborate on this a bit
Try to get some fresh fish by catching your own and taking care of it. Or having a deckhand take care of most of it.
Meaning bleeding the fish and processing it well.

Then I’ll use lemon and lime juice for cooking the fish.
To me it’s important that the juice be half lemon and half lime.

I’ll let that sit for at least 6 hours. Then I’ll use
Cucumber, red, green, and white onion, tomato, and cilantro
You dice that all together and eat with some tostada shells or chips
