    I just read an article about freezing crab meat in milk. Has anyone tried that and if so how did it turn out for you ?

    And what has worked the best for you guys to freeze crab meat...Thanks in advance...

    I just shell it out and vacuum pack it, seems fine, but it’s never lasted past 6 months before we gotta have crab cakes.

    The milk works. So does the vac packer. Just drain the milk well after you thaw.

    Shuck the meat and pack it in a plastic baggie lined container (like a one pint cottage cheese container). Pack the container good and full then pour a weak salt brine over the top. Use just enough brine in each container to moisten the meat, and get the air out but don't totally flood it. Seal the baggie and cap the container. I use about 1/4 cup of sea salt or Kosher salt per 1/2 gal water to make the brine.

    If you are tempted to freeze crab.....you are catching too many crab.

    As said, shell, lay it out on a sheet pan, freeze til firm and vac lack. Doesn't squeeze the juice out. Snip the corner of the bag when thawing. Prevents bag from pulling juice out of crab meat.

    I’ve picked and vac packed and picked and frozen in milk. I think the frozen in milk has a better original taste but the vac packed is a close second.

    This right here is how we do it.

    Make the cakes the way you like and freeze them then Vac Pack. When thawing out cut the bag to remove the pressure from the bag so it does not squeeze the cakes as they thaw.

    We have also just used some plastic wrap and put fresh crab and loosely wrap it not frozen. Insert it into the vac bag and then into the vac packer then to the freezer. This gets used in salads or in a little olive oil garlic sauce over pasta.

    WRONG! I intentionally vac seal about 15 2-cup packs of crab each summer to use for Crab Dips for SEAHAWKS SUNDAY!

    I've heard using the milk makes it more "like its fresh". We just cook with ours that is frozen, either into a dip, or crab cakes, or a chowder or whatever. Straight picked and vac sealed on the low setting so it doesn't suck all the water out lol.

    I put the cooked/cleaned crab meat in a quality 1 gallon freezer zipper lock, add a couple lemon slices, roll tight into a nice log forcing all to escape (La Bamba style). Secure w/ a couple bands. Freeze em up. easy peasy & thaws quickly in cold water bath. Usually eaten around Christmas, quality is great.

    I have done the freeze in milk thing with crab. So far compared to other methods that I have used vac pac. The milk is the way I prefer.

    Milk is for 6 year olds. Pick your crab meat and put it in any tapered plastic container. Keep the meat cool while picking with a small bowl in a larger bowl with ice. separate the containers with a layer of plastic wrap if your lucky enough to have multiple containers. stack and freeze over night. in the morning vacuum pac the frozen crab meat. It works great, you get the natural crab juice from the meat. Not milk. And it lasts years. 1 to 1.5 lb. packages is what we do. Then when you thaw in refer over night of course, You can do any thing you want with meat.
