I made fish tacos tonight using DaGoose's recipe with minor modifications. Found it on an old thread somewhere else.
Cut YT (use whatever fish you want) into 1/2 - 3/4" wide by 4-5" long strips. Washed and dried them then sprinkled with salt and pepper. Roll in flour, dip in egg wash, then roll them in Panko (Japanese bread crumbs).
Dropped them in my deep fryer set on 375 degrees for about 2 - 3 minutes until they were a nice golden brown. Also, heard that pan frying in lard or Crisco is very good too.
Sauce:
Equal parts Mayo and Sour cream (about 3/4 cup each)
splash of vinager
1 large fresh garlic clove
chopped white onion (not measured)
cilantro (no measured)
chopped Anaheim chili pepper (about 2 tblspoons)
couple sprinkles of paprika
Mixed in food processor until all chopped ingredients were blended in. Set in fridge for 1 hour or so for flavors to blend.
Warm corn tortillas, fish, sauce, shredded cabbage and chopped tomato.....HEAVEN!! The best fish tacos I have ever tasted. I rarely make something myself that I consider the best I've had, but these tacos were the bomb!!
