Thanks for the video. Can you sear the filet after curing? Or will the sugar and salt alter the meat or flavor. Always up to new ways of cooking this awesome fish.

Sounds like a dry rub before smoking, without the smoking part. Worth a try...dont see how it can not be good if the yt is fresh. Ill have to try that the next time i get some fresh...thanks for the post.

Toward the end of the video Ken states that the fish is already sashimi / sushi grade so the parasite issue has been addressed...
Which is freezing conditions that the fish have been subjected to, in order to be sushi grade.

Actually. . . . . . :) what you want to do is brush/wipe as much of the cure off as you can. Then rinse under running water, rubbing gently to loosen any stuck on cure. Dry the fish and re-chill before slicing. You can do this with white seabass or corvina as well, but the curing time will be less by half. You can experiment with the curing as well. ( brown sugar, chili, citrus etc)
