    These belonged to my wife’s great grandfather who owned and operated a butcher shop in Missouri around 100 years ago. These knives were boxed and stored years before I was born, but I got em and cleaned them up. The boning knife is an old dexter. I put a serious edge on them and the work awesome.

    That old steel is really nice, you can tell those blades got plenty of work!
    They definitely got well used. That old steel is great! Holds an awesome edge, but they will rust up really quick. Someone put one in the dishwasher, and it was a rust stick when I found it. I got most of the rust off, but I’m gonna have to wet sand it and polish it.

    Simichrome or Flitz will help. Good carbon steel there!

    found this one in the old man’s drawer after he passed, he was not only my dad but my union brother, we placed shit tons of rebar together over the years. a true American bad ass!!!!

    My Uncles Fairbairn Sykes he carried the entire war. Early in WW2, he had a merchant vessel sunk from under him, he joined the British in1940, became a Commando.
