I'm looking for something different than the "usual" BBQ (which is absolutely fantastic-don't get me wrong).

    Over to you

Try this dry rub for salmon. It's my own concoction so bear with me if the measurements aren't perfect. I do it by feel.

1/3 cup high molasses brown sugar
    2 tbsp kosher salt
    1 1/2 tbsp Coleman's dry mustard
    3 dashes Cumin
    2 dashes paprika

Mix dry ingredients and rub on filet. Should be about an 1/8" thick. Bbq skin side down and remove once the fat appears fairly evenly. I personally do it on a Weber so the charcoal goes on one side. Above it, I place a pie tin that has hickory chips in it covered with tin foil and holes for smoke. Filet goes in the middle. Enjoy!

I don't know if you are still around to read this, but I found one of my favorite ways to cook salmon in general is to pour Thai Sweet Chili sauce on it and tent foil around it and bake it. It makes one of the best salmon sandwiches I have EVER had!
