Cook pork roast in crock pot (boil covered on low without crock pot) for 4+ hours. Until fork tender. Cook with 1 1/2 packages of taco seasoning mixed with 1 cup of water, 1 beer and 2-3 tsp of salt.

Once cooked, cut roast up in chunks and flash fry quickly in hot oil (or lard). This will give it color and make the chunks a little crispy.
Take meat out and set on paper towel covered plate. Dump out grease from fry pan. Mix the last 1/2 package of taco seasoning with 1/2 cup of water into the pan and heat up. Drizzle this over the chunks of meat.
Serve with warm tortillas, good refried beans, and fresh salsa

Tried your carnitas receipe last week and it was great. i do not know if you remember the Alphonso's mexican Restaurant on Prospect St in LJ but they cooked up Carnitas on certain days to the rave of their guests. My friend Bill Thresher was manager back then (1980's) and own's McKees Sports bar in rancho Bernardo now. The secret to Alphonso's receipe was the addition of coca a cola and orange juice while boiling the pork meat in lard. he would add creme the last 1/2 hour to soften the meat like velvet. I tried his receipe at home once and when I added the coke to the hot oil it almost burned the house down when the oil bubbled over onto the burner.

When I read your receipe I thought it might be a safe way to try Alphonsos's carnitas receipe again. Therefore, I substituted a can of coke for the can of beer and added two tbsps of orange concentrate. The last hour i added 1/4 cup of half&half. i had to keep an eye when frying the meat because with all the sugar in the meat it burned easily.

The carnitas were great and thanks again for another wonderful receipe. keep'm coming. Wish I had time to cook the refried beans as well.

Yep I eat at Alphonsos often. It is just down the street from my house. Great food but it is overpriced IMO. I guess you pay for the atmosphere. Coke is a great marinade. I use it pretty often for deer and elk steaks.
