Last year‘s YFT by way of the “El Gatos Dos“in August. Shout out to Captain Ethan Hines Canned tuna yesterday, and enjoyed it this afternoon. Simply awesome

You need a pressure canner. The cans need to be boiled at at least 10 psi for 100 minutes. The pressure increases the boiling temp of water, which is why it's necessary. That time and temp is needed to kill off spores of a potentially fatal bacteria.

Regarding the edibility of canned subjects, I agree with YFT>BFT. I would actually put bonito comfortably above both though. It's closer to albacore than anything.

    Yeah I learned a long time ago from someone on a boat how to make "mock" canned bonito where rather than canning it, you poach it in beer and then used it as you would canned tuna. Makes some of the best tuna sandwiches

    Done Albacore, Yellowfin and YT. They are all excellent.

    Most important thing about canning is - DO IT OUTDOORS! Doing it indoors may cause a divorce or will be the last time you do it.

    A Coleman burner will do fine. Like Jer dog said, don't plan on getting the jars back.

    I'd figure that folks who can afford to go long range fishing regularly can probably afford to buy a new set of canning jars every so often LOL or maybe not because they're spending it all on fishing

    But the jars have gotten expensive,
    And around here some times they are hard to find, when you need them.

    I tell them if they want more, they need to bring the jars back!! They all bring the jars back.

    I have them return a jar to exchange for a full one. That way the albacore doesn't linger in the pantry for more than a year and at any given time I still have most of the jars on hand.
    Just be sure to use new lids each time.
