Last year‘s YFT by way of the “El Gatos Dos“in August. Shout out to Captain Ethan Hines Canned tuna yesterday, and enjoyed it this afternoon. Simply awesome
I believe the BFT cans fine. IMHO the richness (fattiness) of the BFT gives it a different flavor profile. Like chu-toro, a little will do yeah.Looks good. Wife says I need to back off with the BF as they don't can as well as the YF.
You need a pressure canner. The cans need to be boiled at at least 10 psi for 100 minutes. The pressure increases the boiling temp of water, which is why it's necessary. That time and temp is needed to kill off spores of a potentially fatal bacteria.Would love to know how to get this done!!! Thanks in advance!!
Yeah I learned a long time ago from someone on a boat how to make "mock" canned bonito where rather than canning it, you poach it in beer and then used it as you would canned tuna. Makes some of the best tuna sandwichesYou need a pressure canner. The cans need to be boiled at at least 10 psi for 100 minutes. Regarding the edibility of canned subjects, I agree with YFT>BFT. I would actually put bonito comfortably above both though. It's closer to albacore than anything.
the only problem giving it to Family , is getting the jars Back to reuse them .Never thought I'd take the time but finally started up and went all in, great to hear friends and family comment how good it is!

But the jars have gotten expensive,I'd figure that folks who can afford to go long range fishing regularly can probably afford to buy a new set of canning jars every so oftenor maybe not because they're spending it all on fishing
yeah that's true markets don't carry them as much as they used toBut the jars have gotten expensive,
And around here some times they are hard to find, when you need them.
Smart and Final is my source.yeah that's true markets don't carry them as much as they used to
I tell them if they want more, they need to bring the jars back!! They all bring the jars back.the only problem giving it to Family , is getting the jars Back to reuse them .

PM sent!I got maybe 10+cases of Ball jars, no lids, if anyone is interested. Don’t do the canning/ bottling thing anymore. Not looking to sell just someone who will use them. In Anaheim / Yorba Linda area.
