Cool! That sounds awesome. I've got like 10#s of it vaccuum-packed in my freezer. Gotta come up with some ways to get rid of it. Was a little intimidated.

We do this with halibut but it should work with cabrilla since you have enough to experiment............

For tacos, get Panko bread crumbs. It's a Japanese breading available in most markets in the culture section (don't mock me too much for this one..........) Cut the fillets in strips to fit the tortilla. Dust the fillets in flour, then egg, and finally in Panko. Fry them in a medium hot cast iron skillet. Lard gives the best results but other oils will do. Top with your favorite goodies.

Our favorite halibut recipe is simply dusting them in flour then cook in butter with garlic sweated in first... in a cast iron skillet of course. Add fresh lemon juice and the topping of your choice (e.g. homemade tartar sauce, mango salsa, etc) if any.

We love to cook...........ever watch Iron Chef?

Rick, I panko almost everything I fry. I love the stuff. I make katsudon pretty often, so I always have a couple of bags around. No spankin on the panko. Sounds good too. I've got lotsa a freeze filets to be trying different techniques on.

I love to cook, just don't have much experience with seafood. I've been a purist with most of that except shrimp. Grill it and eat it. I still think that's hard to beat. I dig the Iron Chef.

You bring over 2 lbs of Cabrilla. I'll cook it for ya with all the fix'ns for taco's, and you bring me 2 lbs of snow crab legs and add some for yourself if need be, then bring me one bitch'in T-bone steak.
You won't be sorry..
Maybe fish 1/2 day then a barb'e / fish fry?

T-bone's are ok but ribeyes are DaBomb. Room em, a fine dry rub, then pan fry in my grandmas cast iron skillet (I like these if you didn't notice). Deglaze with two buck chuck cabernet and add a wee bit of butter.

Let it rest for 5 minutes before serving. Gotta go cook now.

I feel a BD chili contest in the works.

:D :D :D

Stuck, you need to catch fish to jump start the cooking learning curve. It's not your fault.

Bring it!! Let's eat and drink like KINGS!!!

I'm serious. I should have a BBQ soon. Maybe invite some of the fine folks off this board. I know nobody is going to drive to Temecula though......unless I have a keg of Stone brew!!!

I pretty much did it the way you suggested. A little sprinkling of lemon and lime juice, thin slices of onion, thinly sliced garlic and tomatoes. Kinda like a cabrilla fajita. Damn tasty. Now I gotta go catch some of them too!:D
