How To Care For Your Bluefin Catch On The Water

Up until these bluefin started showing up, I never really gave much thought to how I was handling my fish on the water. In the past my idea of “fish care” amounted to getting a fish in the boat, popping a gill, and letting it bleed out before eventually throwing it on some ice. While it worked fine, when I’d get home and clean the fish I’d usually end up with meat that was far from being sushi grade.
