Opah Tommy Gomes
The opah is an unusual fish to see and even more rare to catch. Perhaps the best part about an opah is how great it is to eat. Tommy Gomes, the famous fish monger at Catalina Offshore Products partners up with Chef’s Roll to demonstrate the seven cuts of “meat” on a single fish. Some cuts are excellent for sushi and demand the top grade prices, while others can be used for a wide variety of fish recipes.
Nothing goes to waste on this hook and line caught opah.
