I officially would like to change my vote. I voted for halibut but then I caught my first dorado. holy crap that's good eating!
marinate 1-2 hours:
olive oil, worcester sauce, soy sauce, crushed garlic, thin red onion, pepper, salt, little lime,
grill 5-6 mins per side. wow
sauce to drip over it:
finely chopped fresh basil, olive oil, worcester sauce, soy sauce, crushed garlic, pepper, salt,
best fish I've ever had so far

mako steaks with a ginger and honey type marinade (along with a couple other secret spices) is the best IMO. My opinion might be a little bias because sharks are my fav to go after and the fact that i really dont get down with sushi type stuff (the closest i get is tempura).
